Mac and Cheddar with Tomato Basil

  • 2 cups fresh tomatoes, diced
  • 2 tbsp plus fresh basil, julienned
  • 2 tbsp extra virgin olive oil, divided
  • 1 clove garlic, minced
  • pinch salt
  • pinch red pepper flakes
  • 1 cup cheddar cheese, shredded
  • 10 ozs elbow macaroni or other short pasta
  1. Start boiling water for pasta as you prep the other ingredients.
  2. In a medium bowl, combine the tomatoes, basil, 1 tablespoon olive oil, garlic, salt and red pepper flakes.
  3. Cook the pasta according to package instructions.
  4. Drain the pasta, then toss with one tablespoon of olive oil and the cheddar cheese.
  5. Plate a serving of the pasta, the top with the tomato basil salsa. Repeat for each serving and enjoy!
