- 2 cups fresh tomatoes, diced
- 2 tbsp plus fresh basil, julienned
- 2 tbsp extra virgin olive oil, divided
- 1 clove garlic, minced
- pinch salt
- pinch red pepper flakes
- 1 cup cheddar cheese, shredded
- 10 ozs elbow macaroni or other short pasta
- Start boiling water for pasta as you prep the other ingredients.
- In a medium bowl, combine the tomatoes, basil, 1 tablespoon olive oil, garlic, salt and red pepper flakes.
- Cook the pasta according to package instructions.
- Drain the pasta, then toss with one tablespoon of olive oil and the cheddar cheese.
- Plate a serving of the pasta, the top with the tomato basil salsa. Repeat for each serving and enjoy!
